Balance Your Bake Ovens AND Optimize Your Baked Goods

The portable, programmable BakeWATCH® Profiling Kit offers a traveling method to measure, record, and document both baked goods and oven temperature variations in your conveyorized ovens without trailing long cables or wires.

Oven Balancing: The BakeWATCH profiler, housed in a stainless steel enclosure, travels with up to 6 thermocouple sensors clipped to pans across the belt. This oven ambient data captures a picture of your oven’s performance in the thermal profile. Temperature differences left to right are readily apparent and cold and hot spots along the oven are revealed as well, pinpointing needed maintenance adjustments that will improve product yields and throughput.

Baked Goods Optimization: The next step is to use this new-found product-level thermal knowledge to optimize each product’s profile from the baked goods’ perspective. Inserting BakeWATCH temperature sensors directly into the dough provides you with signature S-Curve data so relevant to controlling an optimum bake.  Entry, Exit, Average, Yeast Kill and Gelatinization temperatures as well as % Bake Time to Arrival temperature are all calculated and displayed for your product improvement and benchmarking.

Now, with a BakeWATCH system you can tame your ovens and tune lateral balance.  Now you can see how actual product temperatures compare to zone settings.  Now you can feed that correlation into the software’s virtual thermal model and Predict the ideal oven settings for the best product profile.
